It’s official, I am starting to really enjoy baking now. In my defense, I have always been a cookie baker… but I have never made cookies like these before! Since buying Sally’s Cookie Addiction cookbook, I’ve been gawking and drooling over each recipe included in the book! This week I made her amazing Monster Cookie recipes and OMG they turned out absolutely amazing. I used to make cookies by just throwing all the ingredients in one bowl, I’d melt the butter because I was never patient enough to let them get to room temp… and I also mixed the dough by hand. This time around, I followed the directions as listed and even used a HAND MIXER... I know, your girl is learning!
It was so fun because I got to make the cookies with Liam (more like he just watched me do most of the work, but he enjoyed participating!). First we had to order all the ingredients we needed through Whole Food’s Prime delivery, so that was a whole thing lol. Liam was having a hard time being patient while we waited for everything to arrive. Once everything was dropped off we got started right away! Like the good little baker I am, I already had the eggs at room temp. and the butter perfectly softened sitting on the counter.
The dough to these Monster cookies was out of this world! You add an entire cup of creamy peanut butter which makes it so amazingly creamy. Then come all the goodies that you later add into the dough: chocolate chips, rolled oats, M&M’s… and I personally decided to add some mini white chocolate chips, because why not! It was fully loaded to say the least. I was really hoping I had bought the cookie scooper I have sitting on my Amazon wish list, I didn’t necessarily need it, but it would have been fun to use. I don’t know why, but I have always wanted to use one of those things. But I made do following her suggestion of making each ball of cookie about 2 tbsp worth of dough. The cookies baked perfectly, I let them go for the full 14 minutes (not going to lie, they were pretty big lol) and ended up with about 30 cookies.
