Yup, I said it. This is the best ever steak sandwich you will ever have. Or at least until I come up with a new combo and then that might be the best steak sandwich ever lol. I swear, 2020 has been the year of BBQ’s– Matt got a grill for his birthday back at the beginning of summer, and since then we have been using it almost every single weekend! It’s a win-win situation because a) Matt loves to grill so it’s fun for him and we all get to enjoy it, and b) it gives me a break from the kitchen!! Wooooooo!!!! It’s also been a lot of fun being able to host at our apartment more often as well. For a long time, we didn’t even have a dining room table (yeah, I know), but now that we do, and we’ve got the grill, it’s been a lot of fun cooking for friends and family.
Last weekend we picked up a few Porterhouse steaks from our local State Bros market. We enjoyed an amazing BBQ with my parents, made some twice baked potatoes (which was an absolutely nightmare lol)…. I didn’t cook the potatoes long enough initially, so it literally took like 3 hours to get the damn potatoes ready. We also made a fresh tomato salad with tomatoes from my parents garden. Enjoyed some delicious clean cocktails (I will share a recipe one of these days!) and some wine with dinner. Dinner was amazing, to say the least, and we ended up with lots of steak left over. Never a bad thing!!! I knew exactly what I would be doing with all the left overs the next day for lunch **correction, the following two days for lunch**. STEAK SANDWICHES, BABY!!!!
Ingredients
left over grilled steak (any type of steak will work perfectly for your sandwich)
sliced heriloom tomatoes
1/2 avocado, mashed
mayo
salt
sourdough bread
Directions
- Toast your sourdough bread
- Slice left over steak into thin strips
- Build your sandwich: a light layer of mayo on both slices of bread. Add mashed avocado, followed by steak, top with tomatoes, and season with some salt!
- Serve with a side of potato chips
