Pizza is hands down my favorite food of all time. Literally. If you asked me what would be my last meal on earth, it would have to be pizza. So it was a no brainer to try to come up with a super easy, super quick, pizza recipe that I could make on a whim! I wanted to be able to put something together quickly for lunch without having to mess with dough and I didn’t want to always have to resort to frozen pizza (as much as I love it too). Naan bread seemed like a very easy way to create this recipe. I love using the garlic naan bread, but the original kind works just as good. Hope you give this recipe a try, I know you’re going to love it!
Vegetarian Naan Pizza

1 regular or garlic naan bread
1/4 green bell pepper, chopped
1/3 cup mushrooms, chopped
1/2 cup spinach or arugula, roughly chopped
2 Tbsp tomato paste
Italian seasoning (or oregano)
pinch of salt
1/2 cup graded mozzarella cheese (or choice of vegan cheese)
Directions
- Preheat oven at 350 degrees
- evenly spread tomato paste on naan bread
- add cheese to naan bread
- sprinkle desired amount of Italian seasoning and salt
- add remaining toppings
- bake for 5 minutes
- set oven to broil on HI and broil for another 2-3 minutes. Keep an eye on your naan pizza to ensure it does not overcook
