A classic go-to dinner for a night when you are not in the mood to make dinner. You might already know that I am a big fun of bowls. Rice bowl or quinoa bowl, doesn’t matter! As long as I am able to throw whatever is left in my fridge in a large skillet, warm it up, add in some type of grain and call it a day… I’m a happy girl! This past week I made this delicious quinoa bowl with lots of yummy ingredients that I think you’ll love.
Quinoa Bowl

Ingredients
- 1 cup quinoa (cook according to directions)
- 2 raw Italian sausages
- 1/3 cup diced bacon, raw
- 1/2 cup frozen corn
- 1/2 cup frozen peas
- 2 carrots, diced
- 1-2 cups raw coleslaw mix
- 1 can kidney beans
- avocado oil
- 1/4 cup coconut aminos (or soy sauce)
Directions
- Step 1
- Heat a large skillet on medium heat and pour in about 1-2 tbsp avocado oil
- Step 2
- Add in bacon and cook for a couple minutes
- Step 3
- Remove Italian sausage from casing and add to skillet
- Step 4
- Breakup sausage as it cooks
- Step 5
- Once bacon and sausage are fully cooked add in coleslaw mix and carrots
- Step 6
- Saute until cabbage and carrots are tender
- Step 7
- Add in frozen peas and corn
- Step 8
- Add in kidney beans
- Step 9
- Season with salt, pepper, smoked paparika, and coconut aminos.
